Cuban Picadillo
Cuban Picadillo Recipe
Ingredients:
1 pound meat of choice (I like to use 1/2 pound pork and 1/2 pound beef)
1 onion
2 peppers (I use red and yellow for added color)
1 can diced tomatoes (tomato paste will also work, depending if you want a thicker texture)
Olive oil
Cumin
Garlic clove
Oregano
Cilantro
1 tablespoon balsamic reduction
Jalapeño (optional)
Raisins (optional)
Olives (optional)
Instructions:
Cook meat in a pan until throughouly cooked, then top with olive oil.
Once ready, add the chopped peppers, onions, garlic, cilantro (and other optionals). Spice it up with cumin and oregano. Let the vegetables soak up the seasoning for a minute or two.
Stir in tomatoes and cilantro. Drizzle the balsamic reduction over the top.
Voilà! Serve over white rice with a side of black beans and sweet, fried plantains.
