Excursion Review + Recommendation: Salmon Bake

Salmon will never be the same again, after being made aware of the taste difference between frozen and fresh.

This excursion was phenomenal. Dodi was our chef. She was a hoot, really nice, entertaining and authentic - one of those people who’s so passionate about their job, you begin to feel the passion too. Her family eats salmon like most do with chicken, so she was an expert.

We learned how to make several dishes using canned salmon (smoked salmon dip, salmon burgers, fish sausage), all of which only took a few minutes to put together - this was a neat hack to learn, especially when you need to make a dish last minute at home. We also watched a demonstration on how to fillet salmon and halibut (pictured below). We were able to then season our fillets and cook them on an open grill out back. The taste of the fresh, never frozen salmon and halibut was worth the money alone.

During the cooking demonstration, Chef Dodi shared her life’s journey of off-the-grid life on an isolated island in Alaska. She had so many different stories one wouldn’t normally hear about.

Now, Salmon is my favorite food, so this class was an obvious choice for me, but my mom, who dislikes salmon still ate it and enjoyed the class - so this is for everyone, even if you think it’s not.

I highly recommend this excursion - do it in the morning so you can have the food you’ve made as lunch. There’s not a whole lot to do in Hoonah/Icy Strait Point, so it’s important to book an excellent excursion - and that is the salmon bake. Make sure to schedule ahead, this one sold out fast.
